Storecupboard – corned beef hash

This is a favourite of mine. Comfort food at its best.

Delectable and hassle free. I have adapted it as a store-cupboard recipe.

You can on course substitute for fresh ingredients.

Prep

Get corned beef tin in fridge
Get picked onions out
Get tinned potatoes out and open tin
Get Worcestershire sauce out
Warm oven to 200celsius.
Break two eggs into a small bowl.

Make

Put potatoes in pan and heat for 7 minutes

Cut cold corned beef into cubes and saturate with Worcestershire sauce

Chop pickled onions. Or onions roughly into any shape size you like.

One potatoes have heated up. Drain. Chop in half.

Put frying pan on heat. Hot as possible add a tiny splash of veg oil.

Sauté potatoes in pan til slightly browned.

Add the corned beef along with the juice to the pan. Stir carefully. Try not to break up the cubes of corned beef.

Add a couple of handfuls of picked onions or an onion or shallots to the mix.

Once all heated through add the eggs to the top.

Transfer to oven for 5 minutes until whites have set.

Plate up

Take out of oven, plate up enjoy with brown sauce. Delicious 🙂
